Domains with special characters like é, 點, ß, æ can only be added when formatting them in Punycode. If not there is a Validation error: Invalid subdomain format at "baseDomain" pop-up. Adding the Punycode version of a domain already works.

The feature I'm asking for would be to first of all allow domains with special characters, having Pangolin convert it, and maybe showing the Punycode version of the domain below the domain for the user to check.

In all other parts of the Pangolin interface I suggest showing the Unicode version of the domain as it's the most recognizable.
