Simon Larsen 629a442ff7 refactor: Remove CopilotServiceService and update references to ServiceRepositoryService

This commit removes the CopilotServiceService module, which is no longer needed. It also updates the references to the CopilotService class to use the ServiceRepository class instead. This change improves code organization and consistency by using the appropriate service class for managing service repositories.

OneUptime Model Library

The OneUptime Model Library is a collection of shared database models and utilities that are used across the OneUptime platform. It is designed to be easy to install and use, and to be extensible. This library is built with TypeScript and TypeORM. It includes models like User, Monitor, Incident, and Team. It also includes utilities like database connection, and query builders, etc.
